BREKKY FROM OZ: CHIA PARFAIT

I saw this recipe and had to try it immediately.

So this chia parfait tastes so good as it looks and it’s such a healthy start to your day! let’s review:

 

Chia – 1 oz. (about 2 tablespoons and 137 calories) of chia delivers 11 grams of fiber, 4 grams protein, 5 grams Omega-3 fats, 30% of your daily manganese, 18% of your calcium, 30% magnesium, and 27% phosphorous. They are gluten free. Chia is loaded with antioxidants and can help lower the risk of heart disease and Type 2 Diabetes. Eat up!

Bee Pollen – Bee pollen is more rich in protein than any animal source. Be pollen boosts your energy, acts as an antihistamine and reduces inflammation of lung tissue (for you asthma and allergy sufferers!), supports your immune system and is an aphrodisiac!

Almonds – Consuming nuts reportedly lowers your heart attack risk by 50%. Almonds lower bad cholesterol and they are the only nut that alkalizes the body — when your body isn’t alkaline enough you can end up with osteoporosis, weight gain and poor immune function. They also contain a lot of Vitamin E which keeps your skin glowing!

Coconut Milk – Coconut milk is one of few foods with lauric acid in it. Lauric acid is anti-fungal and anti-viral, and it can lower triglyceride and cholesterol levels. Coconut milk is also high in vitamins B, C and E, as well as potassium, magnesium and iron.

Raspberries – Antioxidant and anti-inflammatory, high in fiber and Vitamin C.

To start, you will mix 1/2 cup oatmeal, 2 tablespoons chia seeds, 1 cup coconut milk, 1/2 lemon(for fresh lemon juice). Let this mixture sit in your refrigerator overnight so it will form a more yogurt-like consistency when the chia seeds expand.

Next, you’ll make your raspberry jam using fresh raspberries, a teaspoon of honey and a squeeze of lemon juice.

Start with your chia mixture at the bottom, then layer with your homemade jam and bananas. Cover the top with a handful of sliced almonds and a tablespoon of bee pollen. Dig in!
